Though literally translated as "beer cheese," there is no beer in this Old Fashion Brick Cheese. It is a pungent and salted surface-ripened cheese that starts out much like brick cheese. It ripens for several months in highly humid conditions and is related to Limburger cheese, and has a similarly powerful smell, but a much more mild taste. Connoisseurs of this cheese often enjoy it with beer (sometimes dipping the cheese directly in their drinks), hence the name. This Wisconsin cheese has a robust, full bodied, earthy, slightly tangy flavor similar to Limburger.
