Swiss cheese is a generic name for several related varieties of cheese. It is an American version of the Swiss Emmental and is known for being shiny, pale yellow. While its flavor is much stronger, it still maintains the sweet and nut-like taste. It has a savoury, but pronounced sharp taste. As Swiss Cheese ages you will notice that the eye's (holes) may develope "tears" liquid that flows from them and is a natural ocurrance in a properly Aged Swiss Cheese.
