Baby Swiss was first made by the Gile’s in 1981 from our own recipe that my father, Cletus and I, Tim, developed and mastered. Our Reduced Fat and Salt Baby Swiss has won 1st place awards at the Wisconsin State Fair for reduced fat cheese. This Baby Swiss has the milk fat reduced by 1/3 and the sodium by 1/3. The reason why it is called 'Baby Swiss' is because it looks like a miniature version of Swiss cheese, with its mild taste and smooth, creamy texture distinguish it from other types of cheeses. Gile Cheese strives to make their Baby Swiss with lots of shinny eyes or holes as some customers describe them. Baby Swiss melts well, it is buttery, somewhat nutty and has a sweet flavor.
